Rasin Filled Cookies (AKA old people cookies)


So, I'm not sure about you, but......whenever I think of raisin filled cookies...I think of old people. To be exact, I think of an old woman sipping tea, watching wheel of fortune, and eating one or two of these old-fashioned favorites. But, I was obliged to make these. See, I have this neighbor who has been asking me to try these for years...and ironically, as I was visiting my grandparent last week, we made these. So, I asked for the recipe, and off to work was I.

Grandma Elsasser's Rasin Filled Cookies
Items Needed:
Cookie:
1/2 cup softened butter
1 cup sugar
1 beaten egg
1/2 cup milk
3 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
3 3/4 cup flour (or more, if too sticky to roll out)
Filling (recipe to follow)
Directions:
1. Preheat oven to 375. Cream butter and sugar. Add egg, and stir well before adding milk and vanilla. Then, add flour, salt, and baking powder (sifted together)
2. Roll dough out to 1/8 of an inch or a little thicker. With circular cookie cutter or glass, cut out (about 60) circles.
6. Transfer 1/2 to greased cookie sheets. Put 1-2 teaspoons of filling onto the center of each cookie. Place top cookie on top. Press edges together. Brush tops with egg wash (one egg + two teaspoons water) and sprinkle coarse sugar on top.
7. Bake for 12-14 minutes or until light golden brown on bottom.
Filling:
1/2 cup sugar
1 cup chopped rasins
1 cup boiling water
1 1/2 Tbs. flour
1 Tbsp. butter
1/2 tsp. salt
Directions
1. Cook the mixture until thick.
