Pretzels for Jeff
A Collection of Christmas Eve Recipes
- Cranberry, candied walnut, feta, sliced apple, and greens salad (with homeade raspberry vinagrette)
- Homeade Asiago Beer Bread (I'd share the recipe, but it kind of tasted like nothing, I'm not going to waste your time)
- Baked Pineapple Stuffing
- Mom's Red Beets (she insisted upon them!)
- Phyllo and Proscuitto Wrapped Asparagus Spears
- Coconut Pecan Glazed Sweet Potatoes
- Bourbon Dijon Glazed Ham
- Berry Cherry Cream Cheese Pie
- One refrigerated Pie crust
- 2 (8 ounce) packages of cream cheese
- 1 1/4 cups granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1 (8 ounce) container of thawed Cool Whip
- One (21 ounce can) light Cherry Pie Filling
- 3 cups quartered strawberries
- One cup blackberries
Directions
1. Bake Pie crust as directed on the box. ( 9-11 minutes at 450*) Cool Completely.
2. Beat cream cheese, sugar, lemon juice, and vanilla until combined. Fold in cool whip.
3. Place mixture into pie crust and smooth.
4. In small bowl, combine cherry pie filling, strawberries, and blackberries. Place on top of the cool whip mixture. Refrigerate 4 hours or until set.
Unfortunately, I have no pictures of the other recipes. I was so busy and excited about the food that I completely forgot! It was terrible! However, I feel as if you should have these recipes, they are sooo yummy, you don't even need a picture.
- One fully cooked spiral cut bone in ham (9-10 lbs.)
- 1-2 teaspoons whole cloves
- 1 cup packed brown sugar
- 2 teaspoons ground mustard
- 1/4 cup bourbon
1. Preheat oven to 325*, Place the ham (fat side up) on a rack in a large roasting pan.
2. Score the ham in a diamond shaped pattern, and insert cloves into the openings, insert meat thermometer into thickest part of the ham, bake for one hour.
3. Combine ingredients for glaze. Brush hald the mixture onto the ham, bake for 30 minutes longer.
4. Brush the rest of the glaze onto the ham, bake covered for 40 mintutes longer, until thermometer reads 140* (If pan drippings begin to burn, then add 1/4 cup of water)
5. Remove from oven, tent with aluminum foil for 15 minutes before cutting.

Gingerbread, Truffles, and Gobs Oh My!
So, not to dissappoint, but I didn't make these frome scratch. But, taking the gingerbread cookie dough and adding a bit of flour to it, and cutting out little midget men is practically like I homemade them. So, I did..in my mind.
Epic Coconut Marshmallow Fail
As you can see I made one mistake in this picture. Yes, that is a meat thermometer and no, I do not own a candy thermometer as it suggested to use. it didn't bother me to bad. Another issue was the fact that I needed the sugary substance to come to 240 degrees...which as you can see...wasn't even listed on the thermometer.
- 2 teaspoons butter
- 3 envelops unflavored gelatin
- 1 cup cold water, divided
- 2 cups of sugar
- 1 cup light corn syrup
- 1/8 teaspoons salt
- 1 teaspoon coconut extract
Directions:
1. Line a 9*13 pan with aluminum foil, cover with butter
2. In a large metal bowl, sprinkle gelatin over 1/2 cup of water, set aside.
3. In large saucepan on stove, combine water, sugar, light corn syrup, and salt. Bring to a boil, stirring occasionally. Cook without stirring until temperature reads 240* or soft ball stage.
4. Remove from heat, and add gradually to the gelatin mixture. Beat on high speed approximately 15 minutes (should be doubled in size.)
5. Beat in vanilla, pour into prepared pan. Let set for 6 hours to overnight.
6. Cut with knife coated in cooking spray. Roll in powdered sugar, coconut, sprinkles, or coat in chocolate.

Victory in Volvo!
So, I thought that a strawberry cake would be in order. Since I know he likes it, and I was in the mood for a strawberry cake (yes, I can be a bit selfish!) I coated the wonderful cakey goodness in my magnolia cake icing recipe. (Listed in an earlier post!) I cut out fondant shapes, and covered the cake in white fondant.

Whoopie Wonders
This recipe works for ANY flavor of cake mix. I've made strawberry, vanilla, chocolate, fun-fetti (0h my gosh!!) and red velvet so far. More to come I'm sure haha.

I know, more cookies. But listen, it's ok because.....well just because. These are special cookies though. These right here are my PRIZED chocolate chip cookie recipe. (Although these have mnms to be festive, can you blame me?) You should be thankful that I'm bequeathing this recipe upon you. You might be suprised what makes these so wonderful.
4. Bake for 10-12 minutes, until edges LIGHT golden brown. Enjoy, you won't be able to stop eating these tast morsels.

Cinnamon Sugar Chips:
Items Needed:
Flour Tortillas
Melted Butter
Cinamon and Sugar (Mixed to your liking)
1. Preheat oven to 350*, brush melted butter onto tortillas, cut into desired shapes with cookie cutters (or cut into wedges). Sprinkle with cinnamon sugar. Bake until golden brown and crispy!
These go so perfectly with fruit salad it's not even funny. Really, I'm not laughing!
